 The wine-and-oil cellar "La Brilla" is another reason for staying at Villa La Bianca. The name in italian it's also a pun on the word "Brillo", meaning tipsy - comes from an old denomination used for one of the buildings that make up the compound. in the early 19th century, this building was the place used for an operation called "brillatura, a procedure that dried the olives before they were pressed. |
 "La Brilla" is not a traditional restaurant: it's a gastronomic journey, a guided trip through a series of italian flavors and ingredients that lead to a land of pleasure, where good eating and joyous drinking are the final reward. All kinds of pasta; vegetables, cheeses, sweets, and other italian treats that vary from season to season, a cuisine that is basically simple because, in the words of Giuseppe Bigazzi, "italian cooking is based on the quality and freshness of its components, on carefully chosen cooking tools and on several types of heat, both of which enhance the flavor of the main ingredient, and never distor or cover it."
