His culinary genius is based on the use of flavors and ingredients of Tuscan tradition, taking full advantage of the homemade products offered by the area, and personally selecting from the best of local shops and stores.
From the Cinta Senese (local raised pig) to the Chianina (local raised cow) to typical local cheeses, everything is rigorously seasoned and cooked with Tuscan blend extra virgin olive oil. Only in this way is the chef able to create savory dishes of excellence of days passed. This is really what makes our foods special from the appetizers to the desserts.
Menus are designed according to the season: Optimum vegetables small pie with creamy pecorino sauce, the delicate "pici dei musicanti" with rabbit tuscan olive and marjoram, delicious Chianina sirloin steak served with vegetables in season, all accompanied by high quality wine recommended by the maitre who will gladly show you the way to our impressive and well furnished cantina.
