Our newly renovated restaurant "Il Cavaliere" is situated up the hill, just a short walk from the apartments. Visitors can sample the estate's products in a charming and cozy ambiance or during the summer on the terrace, overlooking the Tuscan countryside. Il Cavaliere offers an inventive and fine Tuscan cuisine with ingredients that are typical and traditional to this region. Behind the old stone building, that hosts the restaurant, guests can visit our own vegetable and herb gardens.
 
The estate shop, located in a renovated ancient hay-loft, gives guests the opportunity to taste and purchase our wines, grappa, extra virgin olive oil, and wine and balsamic vinegars - all produced at Castello di Gabbiano. Our estate shop also sells other mementoes of Castello di Gabbiano -postcards, posters, books, polo shirts, and hand-crafted ceramics.
 
We invite guests to make an appointment to visit to the Castello's ancient wine cellar, located under the 12th century castle. The wine cellar, one of the largest in the Chianti Classico area, has been restored and is now used for aging our wines in big oak casks called botti and in small oak barrels called barriques. Guests touring the cellar may request a visit to the acetaia - the place where we age our balsamic vinegar. The acetaia is filled with oak barrels, from very small barrels to medium to large barrels-each specifically made and used for different stages in the vinegar's aging process.

Castello di Gabbiano, owned today by the Beringer Blass Wine Estate, covers 102 hectares (about 250 acres) in the heart of Tuscany's famous Chianti Classico region. Fifty-two hectares (128 acres) are planted in vineyards and 20 hectares (50 acres) in olive trees. The remaining land is native forest and cultivated fruit trees. The Castello sits among the vineyards near the top of the hilly estate. Recently, the Bardi's original 12th century wine cellar was renovated and a modern winery was built just below the Castello. The cellar, which lies under the Castello, houses the botti (large oak barrels) and barrique (small oak barrels) used to age the Castello's wines. the estate also produces wine vinegar and extra virgin olive oil. In 2000, a new olive press was installed in an ancient stone building above the Castello.
